Vegan Enchiladas and Cilantro Lime Quinoa

                     
Enchiladas   

2 quarts Home-canned pintos
1 batch enchilada sauce (see below)
1 batch cashew cheese (see below)
20 corn tortillas

     

     
     

Red Sauce 
1 lrg. can tomato sauce
4 c. water                    
2 t. salt 
3 T. chili powder 
1 t. onion powder     
2 T. cornstarch
1 T. flour
2 T. oil

Blend
Heat in saucepan


Cilantro Lime Quiona is the perfect side with
Enchiladas + it's quick, easy, and healthy!

Ingredients
1 c. dry quinoa
1 1/2 c. water
1/2 c. chopped cilantro
Juice and zest of one lime
Salt to taste

Just bring your water to a boil, add quinoa, cook 15 min, fluff quinoa and add your flavors!   

  
And there you have it! A delicious meal bringing satisfaction to your family's taste-buds as well as a feeling of accomplishment to yourself.
